Salmon with Mango Salsa

More food, I’m a big fan of food.

Reasonably quick, easy and yummy tea.

Salmon fillets

Tsp cumin

1/2 tsp chilli powder

Oil

Half a lime, sliced

Mango, diced

Red chilli, finely chopped

Juice of half a lime

Couple of big handfuls of coriander

Preheat oven to 200C/Gas 6

Place salmon on tin foil on a baking tray and sprinkle over chilli and cumin, drizzle with oil, place lime slices and handful of corriander on top and wrap into tin foil parcel. Place in oven for 20mins/40mins if cooking from frozen.

Make salsa by mixing together mango, lime juice, chilli and coriander (I wasn’t kidding about the easy).

When the salmon is cooked, spoon over salsa and serve with rice, and possibly creme fraiche/sour cream if spicy.

In other news, I have abandoned the peacock top, it’s not working. It shall become notebooks or iPod covers or something useful like that.
